Brownie Batter Cheesecake


We love getting together with people! A lot of times they are potlucks. When ever I ask 'Can I bring something?' I always hope they say 'You can bring a dessert if you want!'

I love to try out new recipes but don't want to bake all the time for just us. I mean I would love that but my Doctor may not agree.

So, I look for any excuse to bake for others. We were planning a get together with a couple different families and we were discussing who would bring what. It came down to me, did I want to cover salad or dessert. Naturally I chose salad but unfortunately I got stuck with dessert. 😝

I stumbled across this recipe for brownie batter cheesecake. I love a good cheesecake but don't make them often, but Brownie batter? Hello! I love finding new recipes that make new flavours using simple ingredients. I would have never thought to add brownie mix. And anything with an oreo cookie crust has me sold.

Maybe next time I will add a dry cake mix! Oh the possibilities.

This Is a no bake recipe and can be made quickly. You can make it the day of, as long as it has a couple hours to set.

No Bake Brownie Batter Cheesecake

Ingredients

Crust

2 ½ cups of crushed Oreo cookies

6 Tbls of melted butter

Filling

3 pkgs cream cheese, softened

½ cup granulated sugar

3 tbsp heavy whipping cream

2 tsp vanilla extract

3 cups brownie mix (dry)

Chocolate Syrup and

Whipped cream for topping

Directions

FOR THE CRUST

  1. Prepare a 9-inch (23-cm) springform pan by lightly greasing the edges of the pan with cooking spray, and then wiping gently with a paper towel. In a microwave-safe bowl, microwave the butter for 45 to 60 seconds until the butter is melted.

  2. In a separate medium-size bowl, pour the melted butter into the cookie crumbs and stir until there are no dry crumbs left. Pour the crumbs into your springform pan and press firmly into the bottom and up the sides of your springform pan to create a thick crust.

FOR THE FILLING

  1. Beat the cream cheese on medium-high speed for 2 to 3 minutes until it’s light and fluffy.

  2. Slowly add the sugar into the cream cheese while beating the mixture. Next, add the heavy whipping cream and vanilla extract. Beat until the filling is smooth and creamy, scraping down the bowl as needed.

  3. Slowly add the dry brownie mix, beating on medium speed until the dry mix is completely blended into the cream cheese.

  4. Pour the filling into the prepared crust and spread evenly. Cover and refrigerate for 4 hours until the filling is firm.

  5. Top with whipped cream, chocolate syrup and serve! 😊
