Cookie Butter Bars
Say that three times fast!
A few months ago the mom's group I attend was hosting a cookie exchange. We were all asked to bring 4 dozen cookies of our choice and the recipe. The cookies were split up and everyone got a small sample or each flavour. I intended on freezing them and taking them out a little at a time. There were a lot of cookies. They never made it to the freezer. or till the end of the week. We love our cookies.
Amoung the delicious assortment were these blondie bars. I ate all in one sitting. SO good. I asked for the recipe and it calls for cookie butter. It was a specific brand but we didn't have any here. At my local grocery store they had Cookie Notti in stock. Sounded good to me. I have never had cookie butter before so I can't tell you if one is better then the other. But I do know that it tasted perfect when I made these bars.
Try them for yourself and I dare you to only eat one ;)
1/4 cup of unsalted butter
1 cup packed light brown sugar
1 Large egg
1/3 cup of cookie butter
3/4 tsp pure vanilla extract
1/4 teaspoon salt
1 1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/8 baking soda
1/2 cup semi sweet chocolate chips
1. Preheat oven to 350 degrees. Line an 8x8 inch baking dish with parchment paper. 2. Place butter and brown sugar in a medium sized pot. Heat over medium heat, stirring constantly, until butter is completely melted and mixture is smooth. Remove from heat and stir in cookie butter. Allow to cool. 3. Meanwhile, combine flour, baking powder, baking soda, and salt and mix together. 4. Once butter mixture has cooled, add egg and mix until combined. Mix in vanilla extract. Stir in the dry ingredients and mix together until just combined. 5. Pour batter into prepared baking dish. Sprinkle chocolate chips on top. Bake for 18-20 minutes, or bars are set and golden brown. Cool in the pan before cutting into bars.
