Whole Wheat Walnut Donuts
We are snowed in! 2 out of the 3 children have high fevers and barely slept last night. Which means I definitely didn't sleep last night. School buses are cancelled and it's very white outside. I don't plan on leaving my house. Which is totally fine. I really don't like winter.
But enough of the complaining. On the positive side; the baby is healthy, I am healthy and my house is clean! I've been wanting to try out a new baked donut recipe and think today is the day to do it.
My husband has been wanting to stay away from sugary snacks. So I'm trying to find some healthy balances. It's not entirely healthy, but I find whenever there is Whole Wheat in the title, he's more open to try it lol. I have a recipe for baked Whole Wheat Walnut donuts with a maple glaze! Sound delicious or what??
It's a super simple recipe and so delicious. Guilt free breakfast ... kind of ;)
Baked Whole Wheat Walnut Donuts
Makes roughly 12 donuts
1 cup All Purpose Flour
1 cup Whole Wheat Flour
1/2 cup Granulated Sugar
1/4 cup Packed Brown Sugar
2 tsp Baking Powder
1 tsp Salt
1/2 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
2 Large Eggs Beaten
3/4 cup Whole Milk
1 tbsp Canola Oil
1 tsp Vanilla Extract
1/2 cup Chopped Walnuts
Preheat oven to 325 degrees
Spray two 6 well donut pans with non stick spray.
1. In a large bowl whisk together all dry ingredients. Set aside
2. In another bowl whisk together all wet ingredients. Add to flour mixture with a rubber spatula until just incorporated. Fold in walnuts.
3. Spoon batter into resealable freezer bag or pastry bag and fill each prepared well two thirds full.
4. Baked in preheated oven until donut springs back when lightly touched, 10 to 14 minutes.
5. Let them cool on a rack completely before coating them. Once they've cooled top them with the maple glaze.
Makes about 1 1/2 cups of glaze.
2 cups of icing sugar
3 tbsp Pure Maple syrup heated *
2 tbsp Whipping Cream (35%)
1 tsp golden corn syrup
1. In a bowl whisk together all ingredients until smooth. Stir in hot water 1 tsp at a time if needed. You want a smooth glaze that is thick enough to cling to the donuts.
2. Dip donuts until the glaze immediately or it will harden. Top with chopped walnuts.
*note table syrup can be used but the flavor is weaker. You can always add some maple extract to help strengthen it.
