A New Year sometimes means new resolutions. Do you make them? I normally don’t. I love the idea behind it and appreciate the desire to change. But it isn't something that can be made on a whim but requires a strict plan and lots of hard work and dedication. Something that doesn't have to only be made on January 1st.
I always say I like my sugar too much :p But what about those that are forced to cut back? A few years back my father in law was diagnosed with type 2 diabetes. It required a complete lifestyle change. No giving up after a week. This had to stick.
Unfortunately, it isn’t always easy to find diabetic friendly recipes that A. Taste good, B. Easy to make and C. Inexpensive. Thankfully my mother in law is a wonderful baker and was always trying and testing out new recipes. This one she created is by far one of my most favorites! It’s like an Orange Creamsicle in a bowl. The best part about this diabetic friendly recipe is that it is A. Delicious, B. Very easy to make and C. Inexpensive (around $5!). Even if you aren’t diabetic and maybe just trying to cut back on your sugar intake going into 2017, this is the recipe for you. Just try and not eat the whole bowl in one sitting. ;)
Orange Creamsicle Dessert
Prep Time Cook Time Serving
15 min 0 min 6-8
1 pkg Sugar Free Orange Jello
1 cup of boiling water
1 cup of ice cubes
1 pkg Fat Free Vanilla instant pudding mix
1 pkg Sugar Free Cool Whip*
1 can Mandarin oranges
Mix together the boiling water and Jello until it is fully dissolved.
Add the ice cubes and stir for 1 minute. Remove any left over cubes.
Add the pudding mix and stir. Let set for 5 minutes.
Fold in the Cool Whip and oranges until thoroughly combined. Refrigerate for at least 30 minutes.
Serve and Enjoy.
*Note : To achieve the right texture and consistency you want to use the real Cool Whip brand and not a cheaper brand.
