Simple Candy Cane Oreo Truffles
It's that time of year where we bake more in one month then we probably do all year long! Am I right or am I right?? I bake regularly, but December is by far my busiest month. I love to make home baked gifts for people. Unfortunately I can't always do big fancy recipes. Simply because there is never enough time.
For example, tonight there is a function at my church and we are asked to bring a plate of our favorite Christmas cookies. My favorite is the French Macaron. Now I don't have nearly enough time to whip those up but I found the next best thing. It's only 3 ingredients and requires NO measuring and NO baking. You intrigued yet? Super easy to make and you can get the kids involved.
This recipe is for 2 dozen Candy Cane Oreo truffles! I find the word truffle is just so fancy. And very minimal effort. It's literally a win win.
You will need a package of cream cheese, a package of Candy Cane Oreos, chocolate and a candy cane (optional)
Normally I use 24 Oreos for this recipe but only 21 come in the smaller candy cane bag. You can get away with 21, it just makes for a stronger cream cheese flavour, which I like. If you want more cookie just add 3 more Oreos. Up to you.
Take your cookies and crush them in your food processor. If you don't have one you can just throw them in a zip lock bag and smash em with a rolling pin. Get out your aggression from all the holiday craziness.
Once your Oreos are crushed, add the whole block of softened cream cheese and mix.
When everything is mixed, scoop out some mix and form it into balls and place them on a cookie sheet lined with parchment paper. Once you have used up all the mix place the cookie sheets with the truffle balls in the fridge for minimum 30 minutes. The longer the better.
Final step is covering them in chocolate. You can use the double boiler method or use your microwave. I opt for the microwave...it's just a bit faster. ;) Chop your chocolate up or if you are using chocolate chips put them in a microwaveable bowl and microwave them for 30 seconds. Then microwaving in 15 second intervals, stirring in between until fully melted. Dip all of the chilled truffles into the melted chocolate then place them on wax paper to dry. You can sprinkle the top with candy cane pieces for that extra added touch!
When I made mine I was pressed for time so I poured my melted chocolate in a squeeze bottle and drizzled it over top of the truffles then sprinkled the candy cane pieces on top. Either works. Both are delicious.
