Green Tea Donuts
My favorite dessert by far is cake! Donuts however, come in a very close second. One Christmas my sister in law had given me a donut pan and cookbook. I didn't have a deep fryer, nor did I like the idea of using a pot of hot oil, especially with children around so I barely used it.
Whenever I am asked to bring a dessert to a function I always try to make something different or fancy. However I am a mom to 3 really busy and sassy children. Except the baby, she's pretty much perfect. So fancy is never really reachable cause I simply don't have the time or patience for that matter. But I found there is always a way to do different and sometimes fancy with little effort.
I needed to come up with something quick and with ingredients that I already had from home, cause Lord knows I was not up for a trip to the store out numbered. I found the donut cookbook and was flipping through it in hopes that there would be a simple and easy recipe. That's when I found one of my most favorite recipes now.
There was a section in the book of just baked donuts, no oil needed. This one was a simple donut recipe using milk infused with green tea. It is so simple to make, and uses basic ingredients so it can be made last minute. It does take a little bit of time because you need to allow the tea bag to steep for 20 minutes, but you can get everything else done in the meantime and it goes pretty quick from there.
Once the 20min are up you will notice the color has darkened and a rich green tea scent will emerge.
I do want to make a brief mention about cake flour. This recipe calls for 1/2 cup of cake flour. I didn't have any on hand and all 3 stores in town were out. The joys of living in a small town. I quickly did a google search to see if I could make a substitute. Thankfully there is and it's super simple. Follow this link on the how to and why!
Every time I make these people go nuts over them. Asking constantly you made these from scratch? When you see the recipe you will understand why I make them so often now. And it you have green tea in hand, which we always do cause it's one of my faves, then you too can wow your guests with a simple and super tasty treat! Don't forget to drizzle them with some sweet ooey gooey glaze! :)
Green Tea Donuts with Simple Sugar Glaze recipe
3/4 cup of Whole milk
1 green tea bag
1 1/2 cups of All purpose flour
1/2 cup of cake flour
3/4 granulated sugar
2 tsp baking powder
1 tsp Salt
2 large eggs, beaten
1 tbsp unsalted butter, melted
1 tsp vanilla extract
Preheat your over to 325 degrees Fahrenheit.
Grease two 6-well donut pans
1. In a small saucepan over medium heat, bring milk to a simmer. Turn off heat. Add tea bag and let infuse for 20 minutes. Discard tea bag.
2. In a large bowl, whisk together all-purpose flour, cake flour, sugar, baking powder and salt. Set aside.
3. In a medium bowl, whisk together infused milk, eggs, butter and vanilla. Add to flour mixture and mix with a rubber spatula until incorporated.
4. Spoon batter into resealable freezer bag or pastry bag and fill each prepared well two-thirds full.
5. Bake in preheated oven until donut springs back when lightly touched, 10-14 minutes.
6. Let donuts cool in pans on rack for 5 minutes. Turn out of pans and cool completely before icing.
Simple Sugar Glaze
2 cups of icing sugar
1-3 tbsp of hot water
1 tsp light corn syrup
In a bowl whisk together 1 tbsp of hot water, icing sugar and corn syrup. Keep adding hot water till it thins out.
Pour over or dip donuts in immediately or else the glaze will harden.
